cup Cheddar cheese, shredded

Place fillets in a single layer in a shallow buttered baking dish. Salt each fillet lightly, then top with about 2 teaspoons of melted butter. Cover baking dish with foil. Place in 450 degree oven and bake until fish flakes easily with fork. Allow 10 minutes for each inch of thickness.
When fish is baked, drain off part of liquid and cover with Lemon Sauce. Serve each fillet topped with a thin slice of lemon, a dollop of sour cream, and shredded cheese. Make 8 servings Note: The trick to cooking moist fish: DO NOT OVER COOK
Lemon Sauce
1 tablespoon corn starch
1 tablespoon butter or margarine
1 ½ cups water
½ cup lemon juiceMake a paste of cornstarch and butter. Bring water and lemon juice to a boil. Stir in cornstarch paste and cook until thickened. Use about 2 tablespoons sauce on each fillet.
